Creamy Broccoli Soup

Creamy

Ingredient:

1. Two teaspoons olive oil

2. 1 small onion

3. Broccoli

4. One and a half cups of chicken broth

5. 1 cup reduced-fat milk

 

Cooking Method and Preparation:

1. Chop the onion

2. Heat oil in a large skillet over medium heat; add onion and sauté until the onion becomes tender.

3. Add broccoli, chicken broth, bring to a boil over medium-high heat.

4. Reduce heat to medium-low and simmer until broccoli is tender.

5. Remove from heat and stir in milk. Purée in batches in a food processor or blender. Heat through to serve.

Remarks of Creamy Broccoli Soup:

When preparing broccoli, boil it for 2 to 3 minutes. Boiling broccoli longer than this can result in a drastic reduction of nutritional value. In particular water soluble vitamins and minerals such as vitamin C get drawn out of the broccoli into the broth it makes.
